recipe: bone broth

Bone broth is a magical gut-healing elixir. It's rich in vitamins, minerals, and collagen, and is a great source of an amino acid called glutamine. Glutamine is the most important nutrient for repairing the tight junctions to heal leaky gut. Bone broth can strengthen the immune system by increasing white blood cell counts. Its rich mineral content supports the adrenal glands during periods of physical and emotional stress. Calcium, magnesium, and other minerals promote strong bones, while constituents such as glucosamine and chondroitin sulfate can reduce joint pain and inflammation.

Your bone broth should look like jello when it’s cold :)

Please note that it is INCREDIBLY important to use the highest quality bones possible. Antibiotics and pesticides are concentrated in the fattiest areas of an animal, such as bone marrow. Only use organic, grass-fed/pastured bones. If you use conventional bones to make bone broth, you will end up with a mug full of toxins. Check out your local farmers’ market! The apple cider vinegar in the recipe allows more nutrients and minerals to leech from the bones, making a healthier, more nourishing broth.                                   

FYI - Bone broth is high in histamine. Use caution if you are sensitive.

recipe:

ingredients:

  • 3-4 lb organic bones (chicken, beef, lamb, fish)

  • 1/2 cup organic apple cider vinegar

  • 1 onion, chopped into large pieces

  • 5 cloves garlic, peeled

  • several 1” knobs of fresh ginger

  • handful of fresh herbs

  • high-quality sea salt

  • 12 cups filtered water

instructions:

  • Place bones at the bottom of pot.

  • Pour apple cider vinegar directly over bones.

  • Add remainder of ingredients (besides salt).

  • Use whatever herbs you have on hand - rosemary, sage, thyme, oregano.

  • Cook:

    • Instant Pot: (my favorite!) High pressure for 2 hours.

    • Slow Cooker: Low heat for 18-72 hours (the longer, the better).

  • Strain broth & allow to cool. Store in glass jars in the fridge.

  • If you’re using an Instant Pot or pressure cooker, you can re-use the bones with new veggies & herbs. Cook them for another 2 to 2 1/2 hours on high-pressure cycle.

  • To serve: Warm and add 1/2 tsp of sea salt.
